EELS in Vinegar, are similar to those in sour paste. The taste of vinegar was formerly thought to be occasioned by the biting of these little animals, but that opinion has been long ago exploded. Mentzelius says, he has observed the actual transformation of these little creatures into flies: but as this hath never been observed by any other person, nor is there an instance of such a transformation in any other animalcule, it seems probable that Mentzelius hath been mistaken in his observations.
