CAYENNE Pepper is the produce of several varieties of the capsicum, an annual plant, and a native of both the Indies. The best, which is brought home from the West Indies ready prepared, is made from the capsicum baccatum, or bird pepper. It has an aromatic, extremely pungent, acrimonious taste, inflaming the mouth, and leaving an impression on the palate which continues for a considerable time.
